Collected recipes from the summer of 2018

Summer sweethearts

The kids are doing a lot of the cooking this summer and they've found some really fantastic recipes so far. This is a list of links to the recipes that they've used.


Pasta Aglio e Olio from "Chef" - This is essentially linguine in oil with garlic, lemon and parsley. It's surprisingly tasty for something so simple.  (Made by Anna.)

Sweet and Sour Cabbage with Bacon - This dish reminds me of my Ukrainian granny. The smell made me feel like I was walking into her house just in time for dinner. (Made by Nathan.)

Chicken fajitas

Chicken Fajitas with Homemade Tortillas - Nathan started the chicken fajitas and then looked in the fridge to get the tortillas. That's when we realized that we had eaten them all when I made quesadillas two nights before. So he made some. The only problem with the recipe was that it needed salt (at least 1 t.) and a squeeze of lime juice would have been nice as well. The tortilla recipe made enough for four. I think next time we'd make one and a half of the recipe. The fajitas were delicious. I added some queso to the peppers and onions and left out the chicken. Next time I'd do a batch of marinated tofu for the veg eaters like me.

DIY Raising Cane's Chicken was made by Naomi. She held back on the salt worried that she'd be over doing it, but then we found it needed more salt than she used. So don't skimp. This is a cooking video.

Creamy Sweet Potato Coconut Soup Recipe, made by Anna. She had brought home a bunch of baked sweet potatoes from work that were just going to be thrown away. She used these to make the soup. She sautéed up the onion, garlic and celery, then added it to the baked and skinned sweet potatoes. She used fresh thyme rather than dried. She skipped the bacon and used a full can (plus a bit) of coconut milk and one cup of water with a veggie bullion cube. She also added a little bit of cream, sugar, and cayenne.
